    My doctor recommended that I eat a handful of walnuts every day. Puzzled, I looked them up and found out why. I thanked him when I went back and he asked if I had tried soaking them in water over night. Again, puzzled, I tried it last night and am amazed. They soaked up a lot of water resulting in a consistency similar to chestnuts with the walnut flavor still.

    I like the earthy flavor of black walnuts; but, they are hard to find and not as healthy as the English walnut.

    By the same web site, you should also eat large quantities of beetroot. You should also be eating the greens too.

    Unless you have a problem with oxalates, fermentable saccharides or polyols. They are good for diabetics. I don't know about the leaves. They can make you see red.

    Beets and asparagus can make urinating exciting!

    They're better-tasting than chard or arugula (sweeter) and more nutritious.

    When I make my traditional Šaltibarščiai, I use the entire vegetable. I will not purchase beetroot without the greens attached (how else can you be assured that the thing is fresh?).

    Question: my English relatives say "beetroot" . My Canadian ones scoff a bit at this and call them "beets". How is it elsewhere?
