    A simple roast with a cheap cut of meat (top round). Said meat was rubbed thoroughly with bicarbonate of soda and left to marinate in a sealed bag in the refrigerator for 3 days. Seared, then braised in burgundy with potatoes, onions, celery, carrots, peppers in a dutch oven for 3 hours. Said meat can be cut with a fork--it falls apart in the mouth.

    Top round is generally a pretty tough cut; this was surprising.

    Look at the happenings of the past year. True, we don't have Sean to kick around any more, but consider that we're in a pandemic, but we have vaccines and we're getting a handle on it. The US no longer has a fascist loon at the helm and it looks like some real progress will be made. NASA has done their usual great job and science marches on.

    Off hand I'm somewhat glad that we're not being beset by loons.
